The surprise in My Potato?!

Hello! I spotted purple wonderful potatoes at Trader Joe’s this week as well as understood it would be the star of this week’s Meatless Monday dinner. I like wonderful potatoes as well as I was hoping this was a fun new version of an old fave. This dinner is super healthy as well as came together in ten minutes thanks to Camiseta Feyenoord the microwave.

They are Muraski wonderful Potatoes. I was super excited when I got them – I’ve always wished to try a purple wonderful potato as well as was secretly hoping it was super purple on the inside as well as full of wonderful vitamins as well as anti-oxidants that would solve all of my issues in life.

Yeah… that didn’t happen.

It was white on the inside!! I assumption “Murasaki” means purple in Japanese. however these special taters have a white flesh. Oh well, it’s still healthy as well as delicious. I believe it tastes like a ‘normal’ wonderful potato (which I love).

Here is the nutrition info, it’s similar to an orange wonderful potato.

I paired my lil Murasaki with beans for protein as well as eco-friendly beans for veggies. This meal came together in 10 minutes since I cleaned as well as pierced the potato with a knife as well as cooked it in the microwave for about 5 minutes. Then, I let it set (it keeps cooking on the inside) as well as heated the black beans as well as eco-friendly beans. Done as well as done.

In other news… my stamina workout from Sunday left me sore in all the right locations today (and just sufficient that it felt great in a weird way?). I’ve got to keep in mind that workout so I can share it with ya!!

And let’s end this lil session with a pic from Vegas. I would state “Hi from Vegas!” however he doesn’t truly care about anything except turkey as well as me leaving him alone today…
